Wines
Shaped by Site and Time
We make two sibling estate wines, both led by Cabernet Sauvignon, both born on the same mountainside and made by the same hands. One is robust and commanding, the other fine-grained and harmonious. Each reflects the character of its vintage and the fruit of our five organically farmed acres.
Our Philosophy
Aaron’s Approach
After years in Bordeaux and Burgundy, Winemaker Aaron Pott brings a European sensibility to Spring Mountain. He favors moderate hang times, gentle extraction, and nuanced blending of lots and barrels. Working directly with several coopers, he travels to France to hand-select tightly grained wood that softens tannins, refining the wines without changing their character.
In the Cellar
Less is More
Integrity is the goal, so we keep intervention to a minimum. We sort our berries three times before sending them on a gravity-flow journey to a long, slow, cool maceration. Fermentations begin without inoculation, lees are stirred for a supple mouthfeel, and malolactic develops naturally. After 20 months or more in barrel, each wine rests six additional months in bottle prior to release.
The Wines
Fe
Cabernet Sauvignon
Fe may be shorthand for the Latin ferrum, but this remarkably complex wine speaks volumes. Polished and dense, it offers notes of black and red cherry, blackcurrant, and blueberry, layered with sage, tobacco, graphite, and exotic spice. Minerality, firm tannins, and vibrant acidity build to a long, elegant finish. It’s always mostly Cabernet Sauvignon, with a touch of Petit Verdot and Merlot in each vintage for balance. And it doesn’t need many letters to say what matters most: While this wine will reward decades in the cellar, it’s a pleasure to taste anytime.

26
Proprietary Red Blend
Every iron atom holds 26 protons in its nucleus, and Aaron Pott happened to be just 26 when he was appointed Winemaker at Château Troplong Mondot in Saint-Émilion. Likewise, our full-bodied yet elegant blend of Cabernet Sauvignon, Cabernet Franc, Malbec, and Petit Verdot has both elemental strength and youthful vitality, and each vintage is painstakingly assembled to demonstrate the best of the vineyard. Mountain fruit, flowers, and minerality are balanced by savory notes, bright acidity, and fine tannins, with a lingering, silky finish.
Library
Each year, we carefully cellar a limited number of bottles from earlier vintages so collectors can trace the evolution of Fe Wines through time. Library releases are reserved exclusively for Iron Circle members, and the offerings change from vintage to vintage.
Membership
The Iron Circle
The Iron Circle is our small community of Fe lovers, and it comes with some wonderful perks. Each year, we gather on Spring Mountain to share the wines, the view, and good company.
